Papa Ted's Chicken Enchiladas

Ted has made us these several times. A good option for the chicken are the whole chickens from Costco. Shredded chicken breasts work too. These are always good!

Papa Ted's Chicken Enchiladas

1 8 oz pkg. cream cheese (light OK)
3 c cooked shredded chicken
2 c shredded cheddar cheese (or your fav cheese) - separated
1 onion, chopped and sautéed
1/2 can cream of chicken soup
1 4 oz can green chilies
1 can enchilada verde sauce (green)
10-12 flour tortillas

Mix first six ingredients (reserving some of the cheese) and fill tortillas. Pour 1/2 can of enchilada sauce (or more to taste) over filled tortillas. Sprinkle with remaining cheese. Bake 45 min at 375. Serve with sour cream, salsa and/or guacamole.
