Chicken Parmesan Bake

Marcie found this recipe on Pinterest and made it here one night. It is so good and so easy! The secret ingredient (croutons) really makes the recipe. I love how easy it is to throw together after work and what really surprises me is how much all three of us like it. Other than pizza, I don't normally crave anything Italian. But, this dish - it always sounds good!

Ingredients:

2 tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes, to taste
6 boneless skinless chicken breasts (I use 5 large breasts)
2 cups marinara sauce (I like Barilla marinara best)
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons

Preheat oven to 350 degrees. Spread olive oil and crush garlic through garlic press over bottom of  9"x13" pan. Sprinkle red pepper flakes over top of olive oil and garlic. Lay down uncooked chicken breasts over oil mixture. (If you use the frozen breasts from Costco, thaw first and cut in half. You only have to use five because they are so large, but cutting them in half helps them cook faster). Spread 2 cups of marinara over the top of the chicken (only using 3/4 of jar). Sprinkle sauce with chopped basil. Sprinkle with 4 oz grated mozzarella and 2 oz grated Parmesan (half of your cheeses). Sprinkle with entire package of garlic croutons. Add remaining cheeses (4 oz mozzarella and 2 oz parmesan). Bake for 35 minutes (but may take up to one hour depending on size of chicken breasts).
