Potato Tacos

ANNA'S FAMOUS POTATO TACOS



My friend, Anna's former brother-in-law from Mexico used to whip these up for her family. The brother-in-law isn't around any longer, but fortunately for all of us - the recipe is. Anna came over and made this for us for dinner. Thanks, friend!!

2 lbs ground beef
4 large potatoes, peeled and chopped
Corn tortillas (15 or so)
Garlic (2 cloves)
Oil (canola or your favorite)
Toothpicks

Your favorite garnishes:
Sour cream
Lettuce (chopped)
Tomato (chopped)
Cheese (grated)
Pico de gallo
Honeymoon Summer Ale beer or your favorite margarita

Heat oven to 300 degrees. Ground beef and drain. Boil potatoes until soft. Mash potatoes. Mix potato and beef in large pot.




Heat oil in skillet. Warm tortillas and stuff with potato/beef mixture while still warm and soft.




Pierce with about three or so toothpicks.




Add taco pockets to hot oil and quickly turn until crisp (ten seconds or less).


Have great friend over to help you!


Add crisped tacos to cookie sheet lined with paper towels.


When all finished, pop cookie sheet in oven until all warm. Open your beer or mix your margarita.

Add your favorite toppings.




YUM!


For dessert... OJ always recommends her famous chocolate covered strawberries. Delish!
